This mixes two of my loves – Christmas and cheesecake! Ok it is a cooked cheesecake so it looses points there but still – yummo!
Anyway, this is lovely on a summer day with fresh fruit so I often take it to BBQs and other Christmas get togethers.
Base:
Mix together…
2 cups of crumbed Marie biscuits
125g butter
0.25 tsp cinnamon
0.25 tsp nutmeg
and put into a greased 20cm springform pan. Place in fridge while you make the filling.
Filling
Preheat oven to 160 C
Beat 500g cream cheese with 180g (0.75 cup) white sugar
When smooth, add 3 eggs one at a time
Stir in 250g dried fruit and 1.5 Tbsp dark rum
Pour into base
Bake until firm (about 1 hour)
Leave door ajar but cool cake in oven
refrigerate overnight then serve & enjoy 🙂
You could leave a slice of this out for Santa, too, and it’s easy enough for kids to make.

Cinnamon & nutmeg is a must have cold weather treat. This looks like the perfect Christmas cheesecake. I will be printing this recipe out and trying it soon! Do you think it would freeze well? I like to bake in qty and save some for later.
Being a cooked cheesecake, it should freeze but I have only ever made a cheesecake the day I want to serve one 🙂 It’s the ‘rum an raisin’ effect I like with this one, but the cinnamon and nutmeg for cold weather is giving me ideas about making this sooner rather thna at Christmas time!
That recipe looks great and you could probably make a couple of extra ones to give as gifts. People seem to appreciate gifts of food during the holidays because they’re too tired and busy to cook.
I’ll agree with that – soem food gifts can be very handy 🙂 As long as you don’t get them all on Christmas Day alongside the left overs, lol!
This looks like a excellent recipe, don’t think I will wait for Christmas to try it. My entire family all love cheese cake and all have their favorites, maybe this one will be everyone’s , so I won’t have to make several different kinds. We are having a birthday party this weekend, think I’ll test it then.
